Ingredients
- 1 large bunch of Tuscan kale
- 4 sun-dried tomato halves, dry or in oil
- 1 clove of garlic
- 1 half of a lemon
- 2 Tbsp olive oil
- 1 tsp salt
- Parmesan cheese, grated (optional)

Wash kale and shake off excess water. Chop off ends and discard. Chop kale leaves.

Add 2 Tbsp olive oil to hot pan and swirl around. Add kale and stir to coat with oil. Keep pan on med to med-high heat. Sprinkle with 1 tsp salt.

Stir kale occasionally until it cooks down a bit. Meanwhile, slice sun-dried tomatoes thinly.

Sprinkle tomatoes into kale and stir. Either chop garlic or use a press and add to pan with kale. Stir.

Cook until desired tenderness. Squeeze lemon into pan and stir. Transfer kale to a bowl or serving dish. Add salt or Parmesan cheese to taste.
